Quality meat is the cornerstone of great BBQ. Opt for cuts that are well-marbled and have sufficient fat content for flavor and tenderness. Believe me, you will get the hang of this over time. If you are smoking for the first time, try something that is more forgiving such as a Pork Butt. While Ribs, Brisket and other meats often steal the spotlight, it is a good idea to try something for the first time that is bulky and holds moisture a little better.
