The amount of BBQ ribs you’ll need per person can be a completely different weight measure as compared with brisket, for example. A high percentage of the ribs is bone where as brisket is pure meat and fat.
Believe it or not, it is easier to guess when it is a larger crowd.
The amount of BBQ you will need varies depending on several factors, including appetite, other dishes served, and the type of event. As a general guideline, you might estimate:
Half a pound to three-quarters of a pound per person: This is a good starting point for most occasions. It allows for a generous portion for each guest without excessive leftovers.
Personally, I lean towards the 3/4 Pound apportionment since you are measuring the weight of your protein before the cook. There will be water loss when it is on the grill or smoker.
However, if it’s a particularly hearty meal or if you know your guests have big appetites, you might lean towards a little over the higher end of that range.
Conversely, if you have many side dishes or it’s a more formal event where people might eat less, you could go with the lower end.
It’s always a good idea to gauge your guests’ appetites and preferences when planning how much food to serve. And if you’re unsure, it’s generally better to have a little extra than to run out!
